Ingredients (2 servings)
◆ Tteok (Korean rice cakes): 400g
◆ Beef (thinly sliced): 100g
◆ Daikon radish: appropriate amount
◆ Green onion: 1/2 stalk
◆ Eggs: 2
◆ Water: 1 liter
◆ Soy sauce: 1 tablespoon
◆ Salt: appropriate amount
◆ Pepper: appropriate amount
◆ Sesame oil: 1 tablespoon
◆ Grated garlic: 1 teaspoon
Instructions
1. Prepare the Tteok
Soak the tteok in water for 20-30 minutes to soften.
2. Prepare the Beef
Cut the beef into bite-sized pieces, heat sesame oil in a pan, and stir-fry the beef. Once the color changes, remove and set aside.
3. Make the Soup
Add water to a pot and return the beef. Add grated garlic and salt, then simmer over medium heat for about 10 minutes.
4. Cook the Tteok
Once the soup comes to a boil, add the soaked tteok and simmer for another 5-10 minutes. When the tteok floats, reduce the heat.
5. Prepare the Eggs
Whisk the eggs in a separate bowl and pour them into the pot just before the soup is done. Once the eggs begin to set, stir gently and turn off the heat.
6. Serve
Ladle the soup and tteok into bowls, garnish with thinly sliced green onions and a sprinkle of pepper, and serve.
