Introducing "Bongchu Jjimdak"

Bongchu Jjimdak's Special Combination
Following the style of Chuncheon Dakgalbi, I tried making Bongchu Jjimdak. Anyone can make it if they follow the rule of cooking it over high heat for 15 minutes, then turning off the heat for 15 seconds. Bongchu Jjimdak is a chicken dish said to be the predecessor of Chuncheon Dakgalbi.

Instructions
1. Simmer chicken, spicy green chilies, garlic, onion, and ginger for about 30 minutes.

2. Strain through a colander, separating the broth and chicken.

3. Heat the boiled chicken, broth, 10 parts soy sauce, 4 parts starch syrup, 2 parts sugar, 1 part caramel, and 1 part oyster sauce. Add sweet potato, potato, carrot, onion, and dried chili in that order, and cook for at least 15 minutes.

4. Add glass noodles (soaked in water for at least 1 hour), mushrooms, spinach, cucumber, and green onions. Turn off the heat, close the lid for 15 seconds.
