Today it's Choreny Tteokbokki. Choreny tteok (rice cakes) are one of the three major local dishes of Gaeseong. What makes them unique is that freshly made rice cakes are not sliced but instead shaped like round cocoons.

1. Here are the ingredients. Choreny tteok, perilla leaves, green onions, cabbage, and seasonings such as gochujang, chili powder, minced garlic, dashida, and corn syrup. Place them in a pot as shown in the picture, then turn on the heat.

2. Choreny Tteokbokki is complete.

The rice cakes are constricted in the middle, making them easy to pick up with chopsticks. Unlike regular rice cakes, Choreny tteok are shaped like two round, dumpling-like rice cakes joined together.
There's even a theory that when Joseon conquered Goryeo, the people of the Gaeseong region, which was the capital of Goryeo, disliked Joseon and made rice cakes shaped like an "8" (as if strangling something) and ate them on New Year's Day.
