Lately, I've been making a lot of Chinese dishes.
1. Gather ingredients: Tofu, ground pork, red chili peppers, green chili peppers, long green onions, chili powder (2 parts), minced garlic, ginger, sauce (soy sauce 3 parts, cooking sake 3 parts, sugar 2 parts, sesame oil, a little water), potato starch dissolved in water (1 part potato starch + 1 part water).
2. Quickly deep-fry the tofu in salad oil or blanch it briefly in hot water.
3. In salad oil, add minced garlic, ginger, and chili powder, then add shredded pork and stir-fry.
4. Add the prepared sauce and a dollop of Toban-djan (chili bean paste), then bring to a boil.
5. Add the tofu and bring to a boil. Then, stir in the potato starch dissolved in water and add chopped long green onions.
6. Mapo tofu is complete.
