Chive and Cucumber Kimchi

Chive and cucumber kimchi (a cousin of Oikimchi).

1. Sprinkle coarse salt (2) over 2 cucumbers to draw out moisture. Discard the liquid released from the cucumbers.

2. Add onion, chili, green onion, chives, sesame seeds, chili powder (3), sugar (0.5), corn syrup (1), kanari fish sauce (sand lance fish sauce, 1),
and grated garlic (1) and mix well.
