- Soy sauce: 1 tablespoon

Instructions
1. Bring a large pot of water to a boil and cook the dried noodles according to package directions. Once cooked, rinse the noodles in cold water and drain well.
2. Cut the cucumber in half lengthwise, remove the seeds, and slice into thin strips. Julienne the carrot and cut the chives into appropriate lengths.
3. In a bowl, combine all the seasoning ingredients and mix well. If you want to add more spice, finely chop the chili peppers and add them.
