I went to the studio of the food stylist in charge of the cover of "Coock and" (magazine) for a magazine photoshoot. He proudly took something out of the refrigerator and offered me a taste... I tried to recreate it based on that memory.
1. Place 30 cherry tomatoes in boiling water and blanch for 10 seconds.
2. Immerse in ice water and peel by hand when the skin starts to come off.
3. Mix olive oil (10), vinegar (5), sugar (2), and salt (1) well. Add minced onion (2), minced basil (2), and white pepper (0.3).
4. Add the peeled cherry tomatoes to the sauce and coat them. It's done.
5. Tomato Marinated is complete.
It's sweet and sour, with a refreshing mint-like aroma from the basil. It's also good as a side dish for fish or meat the next day if stored in the refrigerator. If you don't have basil, parsley or bell peppers can be used. By the way, this basil is homemade (proud). If you're using larger tomatoes, just remove the seeds and prepare them the same way.
