To make kabayaki eel, combine eel (for 2 fish), water (4 cups), dark soy sauce (1/2 cup), mirin (1/2 cup), eel bones (from 2 fish), ginseng (1 root), ginger powder (0.5), garlic (3 cloves), dried chili peppers (2), sugar (2), and peppercorns (0.3). Simmer until the sauce thickens, and it's ready.
Grill the eel until about 80% cooked, then brush with the sauce and grill a second time.
