Yeolmu Kimchi, made with young radish greens, boasts an irresistible crisp texture. The fresh ingredients and special sauce create a perfect harmony, making it an excellent accompaniment to barley rice.
Ingredients
- Yeolmu (young radish greens): 1/2 bunch
- Coarse salt: 2
- Sweet rice flour: 1
- Water: 1/2 cup
- Chili powder: 5
- Anchovy fish sauce: 3
- Sugar: 2
- Grated garlic: 1
- Ginger powder: 0.3
- Yakult: 1 bottle (optional)
- Onion: appropriate amount
- Spicy green chili: appropriate amount
- Red chili: appropriate amount
- Salt: a pinch
Instructions

1. Sprinkle coarse salt over the yeolmu (young radish greens) and let it sit for about 1 hour until softened, then rinse with water.

2. Mix sweet rice flour and water, then heat until it forms a paste.

3. Once the sweet rice paste has cooled, add chili powder, anchovy fish sauce, sugar, grated garlic, and ginger powder to make the kimchi sauce.

4. Combine the softened yeolmu with the kimchi sauce, onion, spicy green chili, and red chili, mixing well.

5. Adjust the taste with salt and gently mix. It's now complete.
