Here's how to make Kalguksu using leftover chicken.
1. Place garlic, green onions, and chili peppers in a pot and simmer thoroughly.
2. Strain the prepared soup through a sieve to obtain only the clear broth. Add kalguksu noodles (udon noodles are also fine) and once bubbles form, boil them while adding cold water intermittently. Season with salt.
3. Shred the boiled chicken and mix it with a sauce (soy sauce, grated garlic, pepper, sesame oil, ground sesame seeds). Lightly stir-fry the vegetables in cooking oil and season with salt. Zucchini and mushrooms would be even better, but I omitted them as I didn't have them in the fridge.
4. Top with the chicken and vegetables, along with the sauce (soy sauce, grated garlic, pepper, sesame oil, ground sesame seeds), and your chicken soup kalguksu is ready.
