Beef and Radish Soup
A traditional Korean soup
Full of deliciousness and nutrition. Tender beef, fresh daikon radish, and aromatic green onions are exquisitely harmonized. The soup has a deep yet refreshing flavor, revitalizing a tired body. The crisp texture of the daikon radish and the warmth of the soup stimulate the appetite, while providing plenty of vitamins and protein. Richly flavored seasonings enhance the taste. Loved as a home-cooked dish regardless of the season, it brightens up any dining table. Its deliciousness and health benefits are appealing, and it's easy to make, making it perfect as an introduction to the charm of Korean cuisine.
1. Preparing the beef
Soak the beef (for stew) in cold water to drain the blood.
(This prevents the soup from becoming cloudy)
Marinate the beef with light soy sauce, grated garlic, salt, pepper, and sesame oil.
2. Making the soup base
Cut the daikon radish into thin cubes and stir-fry it with the beef in a pot with sesame oil.
3. Seasoning the soup
Add water and a piece of kombu seaweed, bring to a boil, then remove the kombu. Season with light soy sauce and salt.
4. Finishing the soup
Skim off any scum during cooking. Once the daikon radish turns translucent, add green onions, ginger, and pepper, and it's done.
