Kampung Meat

"Kampung Meat" is a dish made with pork + Kkanpunggi sauce. I tried similar dishes one after another: Kkanpunggi, Kampung Meat, and Kkanpu Sweet and Sour Pork. Personally, Kkanpunggi was the most delicious.
"Kkanpunggi" is a Chinese dish with a unique and appealing deliciousness. It is characterized by the aroma of chili peppers, a crispy texture, and a deep flavor.
First, the chicken is juicy and tender, and the coating has a crispy texture. The aroma of chili peppers and garlic whets the appetite, and the sweet and spicy sauce ties everything together. This creates a rich and flavorful taste that spreads throughout your mouth with every bite.

I made Kampung Meat by adapting Kkanpunggi. I made Kampung Meat with leftover pineapple and beer that I had eaten and drunk.
Ingredients and Quantities
300g pork, 1 tbsp soy sauce, 1/2 tbsp sugar, 1 tbsp sake, 1/2 tbsp ginger juice, a pinch of pepper, 2 green and red chili peppers each, 1/4 long onion, 1 clove garlic, 2 dried chili peppers, 6 tbsp potato starch, 1 tbsp chili oil, appropriate amount of cooking oil
[Sauce] 1.5 tbsp soy sauce, 3 tbsp sugar, 3 tbsp vinegar, 3 tbsp mirin, a little sesame oil
Instructions
- Cut the pork into pieces 3mm thick, 5cm long, and 1cm wide, then season with sake, ginger juice, soy sauce, salt, and pepper.
- Roughly chop the green onion and garlic, and roughly chop the dried chili peppers, removing the seeds. Also, roughly chop the green and red chili peppers.
- Mix the ingredients for the sweet and sour sauce and prepare it.
- Coat the pork from step 1 with potato starch and deep-fry it twice at 170 degrees until crispy.
- Heat chili oil in a hot pan, stir-fry the roughly chopped green onion and garlic until fragrant, then add the dried chili peppers, red chili peppers, and green chili peppers and stir-fry. Pour in the sauce and simmer.
- Once the sauce starts to boil, mix in the fried meat and simmer until glossy.
Cooking Tips
For the boiled sweet and sour sauce, do not add starch dissolved in water; instead, simmer it without draining the liquid.
