The Charm of Kimchi Jeon
"Kimchi Jeon" is a Korean home-cooked dish where the perfect blend of spiciness and sourness creates a delightful harmony. The depth of fermented kimchi and the crispiness of fresh vegetables come together in your mouth, producing a rich flavor. Its crispy texture and rich taste combine to create an irresistible deliciousness that you won't be able to stop eating once you start. With a hidden sweetness within its spiciness, it pairs perfectly with rice. It's a dish that warms the heart.
Kimchi Jeon on a Rainy Day
On a drizzly day, I crave Jeon pan-fried in plenty of oil. I sip makgeolli from a bowl, listen to the rain on the corrugated roof, and sing of the passing years.
How to Make Kimchi Jeon

1. Chop the napa cabbage kimchi (a handful), pork (a handful), and onion.

2. Mix together wheat flour (1/2 cup), water (1/2 cup), and kimchi juice (1).

3. Pour plenty of cooking oil (1) into a frying pan, pour in a full ladle of batter, and top with sliced red chilies.

4. Once the underside is thoroughly cooked, flip it over once and press down while cooking until done.

5. Your kimchi jeon is complete. Have a bite.
