Mapo Tofu is a dish originating from Chengdu, Sichuan Province, in southwestern China.
1. Lightly fry tofu (2 handfuls = 200g) in vegetable oil and drain in a colander.
2. Heat vegetable oil (1) in a pot, add ground pork (1 handful = 80g), and stir-fry.
3. Bring the Mapo sauce to a boil in the pot.
Sauce ingredients:
Water (1 cup), Doubanjiang (2), dark soy sauce (2), mirin (2), sugar (1.5), chili powder (0.5), grated garlic (0.5), ginger powder (0.3), sesame oil (0.4), pepper (0.3)
4. Add the fried tofu and mix thoroughly.
5. Stir in the cornstarch slurry (3) to thicken, add green onions, and it's done.
6. Mapo Tofu (2 servings) is complete.
