This chijimi made with eggplant offers a delightful crispy exterior and a fluffy interior. The rich flavors of beef and onion are thoroughly incorporated, making it a very satisfying dish. It's even more delicious when enjoyed with a refreshing karashi shoyu (mustard soy sauce).
Instructions

1. Slice the eggplant diagonally. Prepare flour and beaten egg. Julienne the beef and season it with soy sauce, mirin, sugar, and pepper. Julienne the onion.

2. Dust the eggplant with flour, then dip it in the beaten egg, and fry it in a pan.

3. Stir-fry the beef in a pan, then add the onion and continue to stir-fry.

4. Once the chijimi is cooked, wrap the beef and onion in it.

5. Make karashi shoyu and enjoy the wrapped chijimi with it. To make karashi shoyu, mix soy sauce, vinegar, water, sugar, prepared mustard, grated garlic, sesame oil, and salt.
